  • gr.150 of carrotsgr.
  • 150 of celerygr.
  • 150 of onion
  • 3 leaves of basil
  • [dl] 3 of oil of olive
  • gr. 1500 of potatoes
  • gr. 1000 of cool beans
  • gr. 1000 of black cabbage
  • gr. 200 of mature tomatoes
  • gr. 500 tuscan bread
in a pot of correct greatness put a [mirepoix] not too end of onions, carrots, celery, any leaf of basil and do it brown with of the oil of olive. After any minutes unite the potatoes cut asunder; add a part of the beans and the leaves of black cabbage cut . Add the mature tomatoes that we will have had the adroitness now of make brown in an other little of oil, perfuming only with pepper and salting moderately. Leave that the vegetables cook much, adding if necessary few water or broth. To this point unite the rest of the past beans with their broth of cooking, mix continually boil for 10 minutes. Serve in a tureen with bread cut in thin slices.
